  • 1 pound of fresh asparagus

  • 2 tablespoons olive oil

  • ¼ cup grated Parmesan cheese


Instructions:


  1. Preheat your grill to medium-high heat.


  2. Rinse the asparagus and trim the tough ends.


  3. In a bowl, toss the asparagus with olive oil, lemon zest, lemon juice, salt, and pepper.


  4. Place the asparagus on the grill and cook for 5-7 minutes until tender and slightly charred.


  5. Remove from the grill and sprinkle with Parmesan cheese while still hot.


  6. Serve immediately as a tasty side dish or appetizer!

  3. Slice the cooled asparagus into 1-inch pieces and add to the bowl.

Ingredients:


  • 1 sheet of puff pastry

  • 1 cup ricotta cheese

  • 1 pound of asparagus, trimmed

  • 1 egg (for egg wash)

  • Lemon zest, for garnish


Instructions:


  1. Preheat your oven to 400°F (200°C).


  2. Roll out the puff pastry on a baking sheet lined with parchment paper.


  3. In a bowl, combine the ricotta cheese with salt and pepper. Spread it over the puff pastry, leaving a small border around the edges.


  4. Arrange the asparagus spears on top of the ricotta layer.


  5. Brush the edges of the pastry with the egg wash for a golden finish.
