Delightful Discoveries: Unveiling Two Rhubarb Recipes That Transform Sweet and Savoury!

Today, we will explore two exciting recipes: a sweet rhubarb crumble and a savoury rhubarb chicken stir-fry. Get ready to savour these delightful creations!


Sweet Rhubarb Crumble


Ingredients:

  • 4 cups of chopped rhubarb

  • 1 cup of granulated sugar

  • 1 tablespoon of cornstarch

  • 1 tablespoon of vanilla extract

  • 1 tablespoon of lemon juice

  • 1 cup of all-purpose flour

  • 1 cup of rolled oats

  • 1/2 cup of brown sugar

  • 1/2 cup of unsalted butter, softened

  • A pinch of salt


Directions:


  1. Prepare the Rhubarb Filling: In a mixing bowl, blend the chopped rhubarb with granulated sugar, cornstarch, vanilla extract, and lemon juice. Let this mixture sit for about 15 minutes. This crucial step allows the rhubarb to release some of its natural juices, enhancing the flavor and sweetness of the filling.


  2. Make the Crumble Topping: In another bowl, combine the flour, oats, brown sugar, softened butter, and salt. Using your fingers, mix until the mixture looks like coarse crumbs. This crumb topping adds a satisfying crunch to your dessert.


  3. Assemble and Bake: Preheat your oven to 350°F (175°C). Spread the rhubarb mixture evenly in a greased baking dish and generously sprinkle the crumble topping over it. Bake for 30-35 minutes, or until the topping is golden brown and the rhubarb is bubbling. Studies show that cooking rhubarb at this temperature helps to retain its vibrant color and fresh taste.


  4. Serve: Allow the crumble to cool slightly before serving. It pairs wonderfully with a scoop of vanilla ice cream or freshly whipped cream, making it the perfect ending to any meal!

Savoury Rhubarb and Chicken Stir-Fry


Ingredients:

  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

  • 2 cups of rhubarb, sliced thinly

  • 1 bell pepper, sliced

  • 1 onion, sliced

  • 2 tablespoons of soy sauce

  • 1 tablespoon of sesame oil

  • 1 tablespoon of honey

  • 1 tablespoon of ginger, minced

  • 2 cloves of garlic, minced

  • Salt and pepper to taste

  • Optional: sesame seeds for garnish


Directions:


  1. Marinate the Chicken: In a bowl, mix the soy sauce, sesame oil, honey, ginger, and garlic. Add the chicken pieces, making sure they are well-coated. Let it marinate for at least 30 minutes. This not only enhances the flavour but also ensures the chicken stays tender and juicy while cooking.


  2. Stir-Fry the Chicken: Heat a large skillet or wok over medium-high heat. Add the marinated chicken, cooking until it is browned and well cooked (approximately 5-7 minutes). Remove the chicken from the skillet and set it aside.


  3. Cook the Vegetables: In the same skillet, add the onion and bell pepper. Sauté for about 3-4 minutes until they start to soften. Then, add the sliced rhubarb and cook for an additional 2 minutes. The rhubarb will soften and release its tangy flavor, which complements the sweetness from the honey and the seasoning.


  4. Combine and Finish: Return the cooked chicken to the skillet, stirring to mix all ingredients. Cook together for another minute to combine the flavours. Adjust seasoning with salt and pepper as needed.


  5. Serve: Enjoy this stir-fry on its own or serve it over a bed of rice or noodles. A sprinkle of sesame seeds on top adds a pleasing crunch and elevates the dish.
